“To guarantee the health of customers, the fish products served raw are subjected to rapid blast chilling to -20 ° for at least 24 hours in accordance with EC Reg. 853/04.

Depending on the season, some products are frozen/deep-frozen at origin and subjected to and / or blast chilling.

Pursuant to EU Reg.
